Vegan Nachos

I had so much fun creating these nachos. I felt in my own world, just an artist watching my master piece come to life.
Making this loaded master piece would be very simple once you've made up a few of the components. I recommend making most if not all ahead of time except the guacamole ( to keep it's beautiful light green color) but if you want to prep it as well just make sure to add lime juice as the acidic boost helps to keep it fresh. Overall you're looking at a combination of amazing recipes I used from a few vegan creators I discovered out there. Now let's get to the break down of it all.
Starting with the chips. I wanted to try something different besides your normal salted corn tortilla chips. So I did a little research for vegan cheese seasoning to add to my corn tortilla shells. I came across this vegan Doritos recipe made by Fork&Beans. I would like to thank F&B for this awesome seasoning it came out better than expected. Most of the ingredients you may already have. With a few corn tortilla shells and a hand full of seasonings you'll have an extremely flavorful crunchy base to build from!
Moving right along to the queso cheese. If you follow me on IG,and FB you'll know I've tried a few cheese sauce recipes, but needed something more efficient. I came across this chickpea cheese sauce from Power Hungry. By far the best one yet! Not only because it's bomb AF but it's super easy and only took 10 mins. to make. I don't know about you but the faster I can sit and enjoy my creations the better! Talk about a cheesy game changer!
Let's hop on over to this shroom meat I made. If you can think it more than likely it's a recipe for whatever you want to make. Sure enough Alkaline Vegan Mommy helped making vegan ground meat possible with 0 soy. That alone made me very happy! So I crumbled up some mushrooms (pre-sliced) and put my own spin on it with chopped red and green onions and seasonings
Again if you've been keeping up with little ole me you'll know about my go to guacamole recipe (via IG). With a couple of avocados, a container of fresh pico de gallo (I typically get mine from Kroger), one lime, and a pinch of salt/pepper to taste you'll have delicious guac in
2 minutes tops. Just in case you hadn't figured out by now I'm a chef who loves spending more time eating than cooking. Remember it's all about efficiency. All other recipes listed below.
Chips Recipe
6 Corn Tortilla shells
1 Tbsp Olive oil 1/4 Cup Nutritional yeast
1 Tsp Paprika
1 Tsp Chili powder
1 Tsp Onion powder
1/2 Sea salt
Preheat oven for 350. Cut shells into triangles. In a medium size bowl cover your shells with olive oil. Once covered with oil (front and back) add your seasonings. Line a baking sheet with foil or parchment paper. Lay out your tortilla pieces on baking pan and Bake for 12-14 minutes. Rotating pan after 7 minutes. When done baking transfer chips to bowl to cool for
5-10 mins. and set aside.
Chickpea Cheese
1/2 Cup chickpea flour 1/4 Nutritional yeast
2 Tsp Chili powder
1 Tsp Cumin
1 Tsp Garlic powder
1 Tsp Cider vinegar
1/2 Tsp Sea salt
2 Cups of water (divided)
1 and 1\2 Tbsp Tahini
Whisk flour, yeast, chili powder, cumin, garlic powder, and salt in a medium size bowl.
Add vinegar and 1/2 Cup water until mixture is smooth. In a small sauce pan, Bring 1 1/2 water to a boil. Reduce heat to low and add mixtured and tahini and whisk constantly for 5-7
mins. until thickened. Transfer queso to bowl and sprinkle chili powder and green onion on top.
Shroom Meat
1 Small container of sliced baby bella (mushroom)
1/2 Red onion
2-3 Fresh green onion stems
1/4 Cup spelt flour
Heat olive oil in skillet on medium heat. Chop or crumble mushrooms, and chop onions. Add spelt and seasonings ( onion/garlic powder, parsley, and sea salt/ black pepper)mix well and transfer to hot skillet. After 2-3 mins. flip with spatula and repeat 8-10 mins. or until browned and texture is similar of meat. Transfer to bowl us as much as needed for nachos.
So there you have it with a few amazing components you'll create the perfect vegan nachos!
