White Bean Jickn Chili

This time of year, it’s all about comfort for me. Not just in clothing but all-around comfort. Any food can be comfort food. But when I think of comfort food, I’m thinking about something that’s not only fulfilling to my belly but feel up my soul. Something that makes my heart smile and stick to this booty (since my lifestyle changes every pound count lol). Comfort food in this up and down warm to freezing weather is always the answer for me. What’s more comforting than a big ole bowl of soup or chili?





Not much in my opinion! A true all time favorite of mine. Growing up we ate the classic red chili every time the temperature dropped. I first got turned on the white bean chicken chili when I was in high school and it's been love every since. Now a days I'm replacing chicken with something a little different. Today we’ll be chatting about this amazing heartwarming white bean Jicken ( Jack fruit) chili😊.






An amazing twist on a favorite dish Everything about this chili was perfect for a nice snuggle up I’m not going anywhere day or night. Very creamy and fulfilling, from the beans and potatoes to the jack fruit that surprisingly taste just like chicken. I promise you won’t be disappointed with this chili recipe. It may even become your cold weather go to chili (besides the original chili that can’t be replaced). So, get your Netflix/Amazon prime together, grab your fuzzy socks, burn your favorite candle, and get ready to get cozy with a huge bowl of chili!


WHITE BEAN JICKN CHILI


What you will need




  • 1 can jack fruit

  • 1 pack( I used dry beans) or 1 can of navy beans

  • 1 Cup coconut milk

  • 6 Cups water

  • 1 potato

  • 2 Tbsp grape seed oil

  • 2 Tbsp tapioca flour

  • 2 Tbsp garlic powder

  • 2 Tbsp cumin

  • 4 Tbsp nutritional yeast

  • 1/2 Tsp paprika

  • Salt/Peper TT ( to taste or as needed)






Preparation



  • Get your oiled pot nice and hot on Med. heat. Add tapioca to skillet and whisk into a paste.

  • Add coconut milk and water whisk together

  • Add cooked beans, potato, seasonings

  • In a separate skillet saute' your jack fruit. When it's nice and brown and resembles chicken Stir into chili.

  • Let chili boil down for 10-15 mins or until it's thick to your liking

  • Grab the biggest bowl you can find fill it up with this yummy chili and garnish with bell peppers, green onions, and tortilla chips. Enjoy!
